As the chilly winter winds start to blow and the days grow shorter, there's nothing quite like a comforting dessert to warm you up from the inside out. That's why I am excited to share my all-time favorite winter dessert recipe with you! Perfect for cozy nights by the fire (or even to take the chill off when camping) golden syrup dumplings are sure to become a seasonal favorite for you and your loved ones.
Serves FOUR. Prep time: 10 minutes. Cooking time: 25 minutes.
DUMPLINGS:
- 125g (1 cup) self-raising flour
- 40g butter, roughly chopped
- 1 egg, lightly beaten
- 1 tbsp milk
- 1/2 tsp ground cinnamon
SYRUP:
- 250g (1 cup) sugar
- 40g butter
- 3 tbsp golden syrup
- 60ml (1/4 cup) lemon juice
METHOD:
1. Add flour, ground cinnamon and butter into a small bowl and rub together until the mixture is a breadcrumb consistency.
Combine the egg and milk in a small jug and then add to the flour mixture with a knife to form a soft dough.
2. For the syrup, place 500ml (2 cups) of cold water in a large saucepan and add the sugar, butter, golden syrup and lemon juice. Stir over a medium heat until the sugar has dissolved and the butter has melted.
3. Bring the syrup to a boil and then scoop up tablespoons of the dough and gently drop them into the saucepan. Cover with a lid and reduce the heat to a gentle simmer. Cook for approximately 20 minutes. To test if the dumplings are ready, insert a sharp knife into the centre of one - it's ready if the knife comes out clean.
4. Serve immediately, drizzle with syrup and enjoy with ice cream or cream!
